I’m Raquel Lay Phillips, the resident self-taught baker, cake decorator, blogger, wife, and mother behind RoxxBerries Cupcakes. I’m a wife to my best friend Thomas and a mother to 6 beautiful children.

My journey began in 2015 when I turned my love for baking into a business after stepping away from my corporate job.
What started as a hobby quickly evolved into something incredible, thanks to the unwavering support of the RoxxBerries community. Despite temporarily pausing the business to focus on family commitments, my passion for cooking, baking, and creating beautiful organic gathering experiences never left me.
Now, in 2024, I'm thrilled to announce the relaunch of RoxxBerries as RoxxBerries Cupcakes. I'm fully committed to crafting something extraordinary for you. In a world where trust in big box retailers' food can be uncertain, my mission is to provide a unique, home-baked experience using fresh, quality ingredients. I believe in offering you peace of mind, whether you're celebrating holidays, milestones, or simply indulging in a well-deserved "cheat meal." It was important to me that our menu is crafted with care from fresh ingredients – ones I can personally smell, taste, and touch. No baking mixes here, just pure, made-from-scratch goodness.
